One of the baked goods that are difficult to find gluten-free is biscuits so we went to work and created this recipe. It has the texture and flavor of your favorite buttermilk biscuits but without gluten, so make up a batch and top it with our buckwheat honey for a great treat. During our time developing this mix we made a small error and found out that it makes great bread too. This mix is made with Colorado-grown proso millet flour that was raised and milled here at Pfz Farms. Proso millet is a gluten-free grain that can be milled into flour that, when baked, cooks up with flavors and textures just like wheat flour.
Makes 12 biscuits.
Ingredients: Pfz Farms millet flour, baking powder, salt, real butter powder, buttermilk powder, xanthan gum, and annatto for color
Needed ingredients: 2 eggs 1/3 c water for biscuits; 2 eggs 1 c water for bread
